Ham and Cheese Tart
- 4 oz low-fat cream cheese
- 8 oz wheat flour
- 1 tsp. Baking powder
- 1 stick of cold butter
- Salt
- 3 ¼ oz whipped cream
- 1 ½ oz crème fraiche
- 2 oz Mozzarella cheese, grated
- 2 oz Parmesan cheese, grated
- 2 oz Cheddar cheese, grated
- 2 eggs
- Freshly ground pepper
- 1 tsp. Mustard
- 1 tsp. Grated lemon rind
- 4 slice smoked ham
- 4 tart tins (4 ¾”)
Preheat oven to 400 degrees. Mix the flour with the baking powder, the butter (cut up into small pieces), 1 pinch salt and the cream cheese. Knead quickly into a smooth dough, then cover and chill for about 30 minutes. Meanwhile, make the filling by whisking the cream with the crème fraiche, the cheeses and the eggs. Season with salt, pepper, mustard and lemon rind. Roll the dough out thinly on a floured work surface and cut out 4 circles to fit the tart tins. Line the tins with the pastry, forming a raised rim at the edges. Pour the cheese mixture into the tins and top each with a slice of ham. Bake for about 30 minutes.
